| Vinification | The grapes are hand-harvested into small boxes and received at the property’s winery. After manual sorting, they are destemmed and gently crushed, after which the grapes are transferred to a pneumatic press where they are pressed at low pressure. Fermentation then takes place in stainless steel tanks at low temperatures to preserve the wine’s aromatic expression. After alcoholic fermentation, the wines are sulfited to prevent the onset of malolactic fermentation. |
