Adega Guímaro was built early in the century and the wines are produced in the traditional way. In 1991 a major reform did improve their conditions and the winery is now one of the flagship wineries of the Ribeira Sacra.
The young red wine of the winery is a blend mainly of Mencía accompanied by a small proportion of other local varieties. The grapes come from different plots with different orientations and altitudes around the Amandi Sub-zone on slate, granite, and sandy soils from vines ranging between 35 – 40 years old.
