Jérôme Billard took over the running of this estate , which is run on organic principles, from his father. Cover crops are used with no pesticides, the crop is hand harvested and only natural yeasts are used.
Under Jérôme’s stewardship, the domaine has moved towards sustainable and organic farming, emphasizing soil health, low yields and hand harvesting. They avoid chemical sprays, use cover crops, and maintain natural balance in the vineyards. Many parcels are now worked with minimal machinery, sometimes even using a horse to reduce soil compaction.
