Ponsot Estate situated in the village of Rully in the heart of Cote Chalonaisse, was created in 1959 by Lucien Ponsot followed by his son Bernhard whom was responsible for the development of the estate. Jean-baptiste took over from his father in 2000 and rapidly brought it to a recognized name in the industry.

All work in the vine is sustainable and no herbicides are used. Jean Baptiste and his team have to do a rigorous and methodic work to commit to this hardous method and work is intense in each individual parcel.

Vinification A pre harvest sorting is done for tho se grapes that matured poorly. Second sorting is done on the table. Followed by inoculation and maceration done cold for 3 to 6 days. This done at 27 degrees ending at 30 degrees. Depending on Vintages pigeage or reassembly is done. Vatting is done for 21 days followed by malolactic fermentation in wood barrels for 12 months.
