Vinification | The grapes are from a 35 years old vineyard from Quinta da Manoella estate with southwestern exposure. The harvest was planned for the third week of September in perfect weather conditions. All grapes previously selected and destemmed were foot trodden in stone lagares during all the fermentation process (8days). The aging was developed in old French oak barrels during 16 months. |
