Vinification The grapes are harvested for boxes of 20 kg and vinified. Without destemming, the fermentation takes place in wineries with foot steps. After fermentation, the wine is transferred to Portuguese oak casks, macacaúba and mahogany, where the malolactic fermentation takes place. The wine is aged between 24 and 36 months in barrels, after which it is bottled. The bottle stage lasts for another 24 months
