Vinification | The Pinot Gris grapes are harvested at night and in the cool morning hours. Carefully destemmed and slowly pressed. The resulting musts are left to cool for 24 hours so that the lees can settle (sedimentation) and fermented by adding selected yeasts. Once fermentation is complete, this young wine remains on the fine yeasts for three to six months before it is lightly filtered and bottled |
