Vinification The grapes, hand-picked at the optimum stage of ripening, were fully destemmed and softly crushed in a pneumatic press. The must, which was naturally decanted, fermented in French oak barrels from four different cooperages, and was subjected to soft lees-stirring that gave it added complexity and softness. It matured for a further 6 months in the new French oak barrels in which it fermented, following which it was filtered and bottled
