Vinification Fermentation in stainless steel fermenters at temperatures between 22 and 25°C, with moderate pump-overs. Part of the grapes is fermented whole-cluster, without crushing, to preserve their integrity. Malolactic fermentation and aging for at least 6 months in concrete.
